Aged beef (the best <I>filet mignon</I> will have had what is basically a layer of mold scraped off in the kitchen), "hung" game, etc are COOKED. I am partial to a good <I>sauerbraten</I> myself. Indeed, "raw" has occasionally passed my lips, such as the <I>steak tartare</I> mentioned.
